saya menemukan resep lumpia kulit tahu di bonus booklet resep sarapan majalah Sekar. sepertinya enak. saya pun ingin mencoba membuatnya. bahan-bahan aslinya sangat banyak dan saya kesulitan mencari beberapa diantaranya.
Berikut bahan-bahan beserta cara membuatnya yang tertulis di booklet.
kulit:
- 1 lembar kulit tahu lebar, cuci sebentar dan tiriskan
isi:
- 200 gram paha ayam fillet, haluskan
- 100 gram udang kupas, cincang kasar
- 50 gram daging kepiting
- 2 buah jamur segar shitake, potong kotak kecil
- 1 sendok teh daun ketumbar, cincang halus
- 1 sendok teh kecap ikan
- 3/4 sendok teh garam
- 1/4 sendok teh merica bubuk
- 1/4 sendok teh gula pasir
- 2 sendok teh minyak wijen
- 1 sendok teh angciu
- 1 sendok makan tepung sagu dan dua sendok makan air es
cara membuat:
- potong-potong kulit tahu bentuk kotak ukuran 12×12 cm.
- isi, campur semua bahan isi. aduk rata.
- ambil selembar kulit tahu. beri isi. rekatkan dengan putih telur. lipat kiri dan kanan. gulung.
- goreng dalam minyak yang dipanaskan di atas api sedang sampai matang.
ketika saya mencoba resep ini, saya memanfaatkan bahan ‘seadanya’ yang tersedia di kulkas saya. beberapa bahan seperti daging kepiting, jamur shitake, daun ketumbar, dan angciu, terpaksa saya hilangkan. tapi saya tambahkan wortel yang dicacah kecil pada resep saya. hasilnya tetep nendang kok ^^
step by step cara membuatnya saya taati aturan resep asli. yang bikin ribet adalah kembang tahunya. saya menafsirkan sendiri apa yang harus dilakukan sebelum memotong-motong kembang tahu tersebut. kembang tahu yang saya beli di supermarket jenisnya kering, ukurannya panjang dan lebar. saya pikir, pasti tidak mungkin menggulung kembang tahu dalam keadaan kering dan kaku. saya pun merendamnya dalam ember sebentar, agar basah. ternyata selembar kembang tahu kering itu terdiri dari berlapis-lapis kulit tahu tipis. Maka pelan-pelan saya lepas lapisan tersebut satu persatu, daaan banyak yang sobek di tengah! haduh, tekor deh. untung masih lebih banyak yang bisa digunakan.
Begitu matang dan mencicipinya secuil, perasaan bete di hati akibat kulit tahu yang sobek sia-sia mendadak sirna. ternyata hasilnya cukup memuaskan! kriuk di luar, padat di dalam. suami dan anak saya doyan ^^.
