Harusnya sih, bikin perkedel/bakwan jagung itu yang afdol pake daun bawang ya. Tapi suatu hari saat saya kepingin banget bikin perkedel jagung, saya terpaksa tidak melibatkan daun bawang, karena tidak sempat belanja ke tukang sayur. Untung bahan lainnya lengkap. Daun jeruk pun sudah tersedia, karena kebetulan di depan rumah saya menanam jeruk purut.
Resep perkedel jagung ini saya peroleh dari ibu. Versi ibu, bahannya adalah jagung muda yang sudah dihaluskan, bawang putih, bawang merah, sedikit kencur, ketumbar, daun jeruk, garam, daun bawang, tepung terigu dan tepung tapioka (semua pake kira-kira, hehe). Tepung terigu dan tapioka perbandingannya 1:2. Tapioka digunakan untuk menimbulkan sensasi kriuk pada perkedel yang baru diangkat. Saya pernah kelupaan ngasih tapioka saat bikin perkedel jagung. Hasilnya, saat adonan digoreng jadi lembek dan GAGAL TOTAL, hahahaha…
Untuk menghaluskan jagung, seperti biasa, saya pakai blender biar cepet. Bumbu-bumbu saya blender juga bersama jagung. Daun bawang tidak perlu dihaluskan, cukup diiris tipis lalu dicampur ke dalam adonan. Oiya, saya tidak menambahkan gula pada resep, karena menurut saya jagung sudah manis. Maka lebih baik pake pemanis alami dari jagung saja, hehe… saya juga tidak menambahkan telur, karena begitulah resep yang saya peroleh dari ibu, tanpa telur, hehe…tapi bagi yang ingin menambahkan ya silakan.
Begitu adonan sudah tercampur rata, goreng adonan menggunakan api sedang. Api yang terlalu besar menyebabkan perkedel cepat gosong. Foilaaaa, inilah penampakan perkedel jagung minus daun bawang bikinan saya ^^ . meski kurang menarik, tapi rasanya tetap ciamik ^^
