Alkisah jaman dahulu kala, saat saya diajak jalan-jalan ke sebuah toko peralatan rumah tangga di Surabaya oleh bude saya, sebuah cetakan kue terlihat sangat nggemesin di mata saya. Saat itu, cetakan imut-imut ini belum terlalu booming. Baru setelah saya membawanya terbang ke Pulau Borneo, muncul jajanan baru yang memakai cetakan seperti yang saya beli, yaitu sate telur. Sate telur ini berbahan pentol yang dicampur telur, lalu dimasak dengan cetakan bulat kecil-kecil. Kemasannya ditusuk pake tusukan sate, per tusuk diisi 4—5 biji, lalu disiram pake saus kacang/tomat.
Eh, sebenarnya saya mau cerita apa sih? Hehe, ini lho, saya habis bikin kue lumpur pake cetakan yang saya kisahkan di atas. Dulu saya beli cetakan itu dengan tujuan untuk membuat martabak manis (terang bulan) mini. Tempo hari pas nemu resep kue lumpur labu kuning, kok ya kepingin bikin pake cetakan lutju ini.
Akhirnya, dibantu asisten pribadi saya yang centil, saya pun membuat kue lumpur labu kuning.
Bahannya:
3 btr telur
90 gr gula pasir
150 gr tepung terigu serba guna
375 gr labu kuning, kukus, haluskan
110 ml santan
40 gr margarin, cairkan
Cara membuat:
1. Kocok telur dan gula sampai larut. Seharusnya sih, pakai mixer ya ngocoknya. Tapi karena mixer saya sudah almarhum, saya pakai blender. Jadi buat yang nggak punya mixer, tenang, blender pun jadi ^^
2. Masukkan tepung terigu sedikit demi sedikit sambil diaduk sampai rata
3. Masukkan labu kuning sedikit demi sedikit sambil diaduk sampai rata dan adonan halus
4. Tuang santan dan margarin cair, aduk kembali
5. Panaskan cetakan, olesi sedikit margarin, tuang adonan sampai hampir penuh, masak sampai matang (versi saya 5—10 menit dengan api super kecil supaya bagian bawahnya nggak gosong).
Sebenarnya sih, ditambah daging kelapa muda dan kismis pasti tambah mantap rasanya. Tapi karena nggak sempat beli, ya seadanya saja. Raya malah menambahkan meises warna-warni di atas kue lumpur kreasinya, hihihi..

Untuk adonan yang saya buat ini, lumayan banyak lho jadinya, 38 biji ‘sekali hap’. Tapi kalo pake cetakan lumpur betulan mungkin nggak sampai segitu. Oiya, supaya kue lumpur nggak rusak saat diangkat dari cetakan, saya punya tips nih. Kalo mau agak rempong dikit, ketika kue matang, jangan buru-buru diangkat. Matikan kompor dan diamkan sebentar (ditinggal nyuci piring sebentar atau mandi kek, hehe), angkat pelan-pelan pake gagang sendok kecil yang tipis, baru deh, bikin yang kloter selanjutnya.
